Banana and Walnut Bread

  • 1-3/4 cups flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs, lightly beaten
  • 1/2 cup unsalted butter, melted and cooled
  • 3 ripe bananas, mashed
  • 1 tsp vanilla
  • 1/2 cup walnuts (optional)

For the icing:
2 semi-sweet chocolat squares
1/2 tsp. unsalted butter

Preheat oven to 350°F.
Butter and flour bottom and sides of a 9” x 5” x 3” loaf pan

In a large bowl, combine flour, sugar, baking powder, baking soda, salt and walnuts.

In medium bowl, combine mashed bananas, eggs, melted butter and vanilla.

With spatula lightly fold the wet ingredients into the dry ingredients, just until combined (Do not over-mix).
Pour mixture into loaf pan and bake until toothpick inserted in the center of the bread comes out clean, about 55 to 60 minutes.

When the loaf has cooled, melt the butter and chocolate squares, and drizzled over loaf.
